Topos Mondial Corp designs custom slide gate dough chunkers (SGDC) to meet various dough portioning needs. These chunkers work best with free-flowing, sticky dough (higher absorption). The system uses a four-sided, inverted pyramid stainless steel hopper with a slide gate guillotine at the bottom.
The hopper can feature a non-stick (Teflon) coating for improved performance. A sharpened stainless steel blade, pneumatically actuated, serves as the slide gate guillotine. The system uses either a dough position sensor or a timed open-close relay to control the gate and produce properly sized portions.
Portioned dough can drop onto a dough handling belt or directly into a hopper at the start of the make-up line. Dough can be fed directly from the mixer or positioned above a hopper to work with a bowl or trough hoist system. This design ensures accurate portioning and smooth integration into your production process.
