This device boasts an innovative feature allowing for the interchange of mixing tools, with the current setup including a flat mixing paddle as depicted. It offers dual-speed mixing capabilities and a bowl that rotates in reverse, enhancing its functionality. The mixer’s bowl is gear-driven, a superior mechanism compared to other bowl driving technologies, ensuring reliability and efficiency. Designed to operate on 208/220-240 volts 3 phase electrical power, this mixer excels in mixing approximately 250 lbs of yeast-raised dough at 60% absorption rate, with the capacity varying for different types of dough. It can handle heavier loads for batters and “short” dough mixes, whereas firmer and denser yeast-raised dough mixes require less weight. Previously, this mixer was employed in the preparation of muffin and brownie batters.
